Ingredients

  • 1 ½ cups rolled oats
  • 2 tablespoon chia seeds
  • 1 cup vanilla almond milk or dairy milk with ½ teaspoon vanilla extract
  • ½ cup vanilla greek yogurt
  • ¼ cup rainbow sprinkles + more for topping

Instructions

  • In a bowl, combine oats, chia seeds and greek yogurt.

  • Stir in almond milk and rainbow sprinkles.

  • Cover and store in your refrigerator overnight.
  • Top with extra sprinkles in the morning, if desired. (Most of the sprinkles in the oats will dissolve because of the liquid. But it will leave a rainbow/ tie dye color!)

🔢 Recipe Yield
This funfetti overnight oats recipe will make enough breakfast for two to three people depending on portion sizes. However, you can easily double or even triple the recipe if you need to.
 
👩‍🍳 Recipe Variations
If you don't like sprinkles, you can add dried fruit, chopped-up nuts, or something as simple as a pinch of cinnamon. I like to make overnight oats with dried apples, then I add cinnamon and a little honey.
 
🥫 Storage/Shelf Life/Reheating
These funfetti overnight oats can be stored in a glass bowl with a lid, mason jar, or meal prep containers in your refrigerator for up to 5 days! So, you can make a couple of batches on Sunday night and have a quick and easy breakfast the rest of the week. When you are ready to eat your oats, top them with a few more sprinkles and enjoy!

  • Mix everything well. You want to mix your ingredients until you don’t see any clumps.
  • The sprinkles will dissolve. Most of the sprinkles you put in the night before will dissolve because of the liquid, but it will leave a fun, cute, and colorful tie-dye appearance. If you want to top the oats with more sprinkles in the morning, you can.
  • Add fresh fruit. In the morning, add fresh fruit such as strawberries, blueberries, or raspberries.
