Oats have a very well-balanced nutritional composition, and they are actually more digestible after they have been soaked overnight, so you absorb more nutrition. The chia seeds are an excellent source of omega-3 fatty acids, antioxidants, fiber, iron, and calcium. And, greek yogurt provides additional calcium and contains probiotics that support gut health. Keep in mind that the sprinkles do add sugar which isn’t necessarily healthy for you, but you can do as many or as little as you like.
To make this an even healthier option, I use vanilla almond milk for my overnight oats. However, coconut milk, oat milk, soy milk, or cow’s milk can all be used. There’s no specific milk that works better or worse for this recipe – just use whatever you prefer.
This recipe is a make-ahead breakfast so it is recommended that the oats sit overnight. If you want to eat the oats sooner you can – it takes about 4 – 5 hours for the oats to soak up the milk. (Or you can cook the oats in the microwave in increments of 30 seconds to cook the oats but not burn the milk!)
